White fluff is normal when chia seeds first sprout. However, spraying the seeds with water will help reduce the fuzzy appearance, so do this daily. This fluff is simply the root hairs and they will disappear after the first week.

Mold can grow in chia seeds if moisture gets into the bag. And when that happens, the seeds are no longer safe to eat. But if you store your chia seeds properly, the chances of this happening are almost zero.

Eat Your Healthy Chia Sprouts
Chia sprouts have a tangy flavor and add variety and flavor to salads, soups, spreads, dips, sandwiches and appetizers. They are best used raw or added to soups just before serving.
Keep the medium moist – but not soggy – by watering or misting every day or two. When your plants mature and begin to shed their covers, they’ll be ready for light, so place them in a well-lit spot (if necessary). If you go with sunlight, be prepared to water more frequently.
You can cut the sprouts just above the roots and use them directly. Or you can also take the whole thing with roots and all, lift roots and all out of the tray and refrigerate in a partially closed container for up to 10 days (simply cut the sprouts above the roots to eat ).
